I was supposed to do a heart rate test with my coach yesterday on the track, but the rain had other plans. So my afternoon was punctuated with a soggy 6 miler. After work, I went to active release therapy (ART) and then proceeded to absolutely destroy my kitchen cooking recipes from Run Fast Eat Slow haha! It was great fun, though I do not think you should or need to make the horrific mess that I did when making these recipes.
After ART, I was starving and needed something hot and quick before the cooking frenzy began. I opted for Shalane’s Breakfast Meets Dinner bowl, which I have lovingly started referring to as a garbage bowl. Shh don’t tell Shalane. Basically I throw in every veggie in my fridge and whatever else I think will taste good. But the base is beans, rice and an egg. Yesterday I also added spinach and guacamole.
I prepped the high altitude bison meatballs for tonight. The boyfriend will probably be at my place for dinner. Red sauce + pasta + meatballs is always an easy win for his Italian side. I love that they have kale in them. Admittedly, I didn’t do as good of a job as I should have mincing the kale. I really need a food processor.
I also made the double chocolate teff cookies. I was not expecting them to be FREAKING DELICIOUSLY AWESOME. But they rocked my world. Don’t worry, I sampled one from both batches and they were equally perfect.
The cookies required both teff and almond flour. After a clean out and reorganization of my pantry (I was not exaggerating about ripping my kitchen apart), I discovered I have 5 types of flour. There were 6, but the coconut flour had seen better days. That’s normal, right?
I also ordered the sampler pack from Jem Raw. So serendipitous that it should arrive the same day I was making all these recipes! Elyse and Shalane have talked about them in several podcasts and interviews for the cook book. They have really unique flavors and are stone ground to a very fine consistency. Naturally I immediately tried all four. I can already tell the Cinnamon Red Maca & Hazelnut Flavors are going to go fast. The other two flavors were also amazing. P.S. I’m so glad I’m a blogger and find it acceptable to break up my run on sentences and paragraphs with photographs.
