I’m pretty confident all omelettes should have sweet potatoes in them. John’s Mom made us breakfast and it was excellent.
Our flight was delayed enough that we would be landing after our connecting flight already took off. We were staying with John’s Mom & Dad, and of course got this notification after we had already driven the hour to get to the Anchor airport. We booked on the next flight, which was a red eye leaving at 1:50AM. Luckily, John’s grandma lives quite close to the airport and let us hang at her house for the afternoon and evening.
I cajoled my sweet sweet boyfriend into taking me to a nearby gym to get some solid treadmill miles in.
The gym we went to was right across the street from the running store, Skinny Raven Sports. If you are ever in anchorage, it’s a must. I loved their logo and was pumped to get a cute tank with one printed on it. Also, you know how running skirts have become so popular? They had down ones! How Alaska. Perfect for 13 degrees if that’s your thing.
We came back to John’s dinner with her and had amazing tumeric chicken thighs with roasted veggies. Dessert with pumpkin seed granola over ice cream and a side of dark chocolate spoke to my soul as well. I have never liked pumpkin, but pumpkin SEEDS are awesome and a great source of iron.
