Thanksgiving is tomorrow! I’m really looking forward to seeing all my extended family. I’m also loving running on the flat for days roads!
While we will have the traditional Thanksgiving spread, we also have some vegetarians. Anymore, when you have a given large group of people, you might have Paleo, gluten free, vegetarian and/or vegan. This dish is something I’ve found to be a crowd pleaser for many (although quinoa isn’t technically Paleo, it is gluten free).
A few years back, I wanted to make something healthier than the traditional sides as an option. I made this dish, and accidentally added two TABLESPOONS instead of TEASPOONS of salt. It was so bad!! My dad, god love him, ate huge helpings of it to make me feel good. He probably has heart plaque still from that meal hahahaha!
1 tbsp olive oil
1 lb cremini mushrooms, thinly sliced
5 cloves garlic, minced
1/2 teaspoon dried thyme
Salt & pepper to taste
2 tbsps Parmesan (optional)
1. Large sauce pan – cook quinoa & set aside
2. Heat olive oil in a large skillet over medium high heat. Add mushrooms, garlic and thyme, and cook, stirring occasionally, until tender, about 3-4 minutes; season with salt and pepper, to taste. Stir in quinoa until well combined.
3. Garnish with Parmesan cheese if desired
