Happy Friday! I figured I’d give you an update with a round up of recent pictures from my phone haha.
Any week I get to have my favorite Spicy Tuna Salad from Blue Barn is a good week. But it is especially good when I get to have it with one of my best friends! The only problem is I inhale the salad too fast and then I’m sad when its gone.
Bennie and I visited the hospital this week and he got lots of cookies. I hate to see kids/teens in the hospital, but I am always glad to see their faces light up when this guy comes trotting in their room.
I ate this exact breakfast (egg whites with spinach, toast with peanut butter + banana and coffee), for almost 10 years. Every. Day. And then one day I thought if I had to clean the egg pan again I might throw it out the window. So I switched to oatmeal. This week I had a craving for my old standby again. This is all very important I know LOL.
This is my go to dinner lately. It’s so easy and quick. Preheat the oven to 425 and put the green beans on a pan with olive oil and a LOT of garlic powder. I put them in the oven right away, even if it isn’t preheated quite yet. Then I fire up the grill & grill the salmon for 14 minutes. While the salmon is grilling, I microwave the mini potatoes for 3 minutes. After 3 minutes, smash them with a coffee cup and put them in a frying pan for bit with some olive oil. I just leave them in the pan (flipping when they start to get crispy on one side) until the salmon is done.

But by the end of the week, the sunrise was fire orange. Which ended with a lot of rain.
I also spent a couple of runs just covering up my watch and running for fun, which I think is really really important. It’s so easy to get caught up in the numbers, so it is a good reminder for me to enjoy just running.
I can’t believe Boston is so close. Less than 100 days until we are back. Speaking of which, I get to start doing a double run day next week! Just one day a week, but I’m so so excited!!
This weekend I may have to get a fruity cocktail of some kind. I’ve been craving something like this delicious cotton candy cocktail that I had in Barcelona. That and some chips & guacamole.
The biggest excitement of the weekend for me is meeting up with a fast group of ladies to run on Saturday. I know it is going to be fun and the miles will fly by!
