I can’t get enough of sweet potatoes lately. The little sign at Whole Foods says they are one of the healthiest foods ever, so that must be true – right? HAHA.

My favorite way to eat them, hands down, is cut up into french fry shape and cooked in the oven. You can read a step by step of that here.
Lately, another favorite has become sweet potato hash. It is little work (and faster cooking time) than the french fry method.
Just cut up into cubes and throw in a frying pan. You can cook up onions and garlic first, then add in mushrooms, and add the potatoes. I use garlic powder, cayenne, salt and pepper for seasoning.
They taste awesome with ketchup like this too! I use the sugar free kind. And a fried egg of course is always phenomenal.
