Happy Tuesday peeps! It has been so foggy and cold in the mornings here. If you are one those people that is suffering through your 5 am runs in the heat and humidity – you need a trip to Marin County haha.
Bennie The Wonder Dog and I went to the hospital on Monday for his bi-monthly visit. He is a therapy dog, so he goes around to each patient’s room for love and snuggles. When I put on his “work uniform” aka the bandana in the picture, he gets REALLY excited.
I decided to give making cauliflower pizza crust a try. I used this recipe from the lovely Robin at Knead to Cook. Her recipes are always super healthy and well thought out, so I knew it would be a good one.
I bought the riced cauliflower from Trader Joe’s, shredded cheese, and pre-minced garlic. So this recipe was VERY easy.
I was worried it would be hard to get all the moisture out of the cauliflower, which seems to be the key for successful pizzas, but it was pretty easy.
The finished product! How great is this pizza cutter? You can find it here. Yes, I may have made the pizza just to use the cute new pizza cutter.
My only issue with ANY cauliflower pizza dough recipe is that they all rely heavily on cheese as a binder. Which, of course, makes it grain free and that’s great if being grain free is your goal. But I basically ate an entire cup of cheese making these. Or maybe you aren’t supposed to eat the whole recipe by yourself?…HA! I don’t generally have issues eating cheese though, so my tummy was very happy and I didn’t feel bloated and greasy like I sometimes can when eating Round Table pizza.
What are your thoughts on cauli-pizza?
